Pumpkin #2

2nd use for canned pumpkin: experimental hummus!

Today's hummus ingredients are:
  • 1 can garbanzo beans (drained, rinsed)
  • about a 1 inch chunk of fresh peeled ginger
  • 3 Tbs pumpkin
  • 1/2 frozen banana (always have some for one ingredient ice cream)
  • a splash of lemon juice
  • a splash of olive oil
  • a little brown sugar to taste (accidentally about 1 Tbs)
Initial tasting actually pretty lemony, so I decided to shake a little brown sugar in instead of measuring (smart move). Just have to see how well it's received at dinner.
